The organic extra virgin olive oil SICILIA P.G.I. (Protected Geographical Indication) is produced only from cultivars plants "Biancolilla" expressing in this oil the maximum of their peculiarities linked to the region and culture.
The characteristics and properties conferred by the cultivar (quality of olive trees) in an extra virgin olive oil, may vary greatly depending on the structure of the territory, the climate and soil characteristics in which they are grown. The age-old Biancolilla cultivars make "SICILIA P.G.I." unique - with its rich taste and organoleptic characteristics.
It is produced with scrupulous care, from the harvesting to the milling, from storage to the bottling. Its qualities make it particularly suitable for savoury uncooked dishes as mixed salad, fish starters, vegetable soups, roasted fish and meat both white and red.
The link with the territory is playing an important role as in fact this oil comes in an olive grove, not far from the Tonnara of the Nature Reserve "Oasis of Vendicari" also called "Bajuto".
The Vendicari Reserve covers about 1,512 hectares, of which 937 are pre-reserve and dedicated to agriculture (olive groves, citrus orchards, vineyards and vegetable gardens). It includes archaeological and architectural sites uncovering the life of people in these places back to Greek times, such as tanks-deposit traces of a Roman-era factory for processing fish, a small necropolis and a Swabian tower, built at the end of the fourteenth century, in the Aragonese period. The Bajuto tuna fishery, the connecting channels to the sea and structures for processing fish, were still active up to almost half of the twentieth century.
The presence of vast marshes with high salinity has contributed to the creation of an ecosystem that is the reference point for birds from Africa. It includes different habitats: the rocky coast, sandy coast, Mediterranean one, swamps (brackish and freshwater), salt marshes, scrubland and cultivated areas.
In order to fully appreciate a product you need to know its origin.
